About Japanese Knives
There are two types of Japanese knives. One sided blades(Traditional Japanese knives)
and both sided V-sharpened blade(Western-style).
Examples of one sided blades are “Yanagiba Knife”,“Deba Knife”, “Mioroshi Knife”,“Funayuki Knife”.
These knives cut and fillet fish easily.
And V-sharpened blades are “Santoku Knife”,“Gyuto Knife”,“Nakiri Knife”.
These are used for meat and vegetables but V-sharpened blades are also able to be used for fish.
